This winter, potatoes are a best buy in vegetables. In fact, a serving of potato even costs less than a serving of pasta, which is usually considered an economical accompaniment for meat. Properly cooked potatoes contribute valuable amounts of Vitamin C. They also supply food energy and satisfy hearty appetites. Potatoes which are baked, boiled in the skins, or french fried retain most of their food value. Here are some cooking tips for potatoes. To bake them in half the regular time, cut large potatoes in half and bake them, cut side down on a cookie sheet. Pressure cooking also shortens the cooking time. Pressure cooked potatoes are ready to eat after 9 minutes of cooking in 1/2 cup water at 15-pounds pressure. Cut the large potatoes in half and cook them with the skins on to preserve nutrients. Potatoes cooked around a roast have delicious flavour. Par¬boil the vegetables for 10 minutes, then brown them around the meat for the last 45 minutes of cooking. <1mn 35s>
