Usually it's impossible for a working woman to serve a roast of beef during the week. In order to have dinner ready for 6 or 7 o'clock, the meat would have to go in the oven in the mid-afternoon. However, there is a way that you can prepare a beef roast during the week. This method has an added advantage since it uses the cheaper, less tender cuts. Normally a less tender cut such as a blade, cross rib or round bone shoulder roast is cooked by moist heat. In other words it's pot roasted so as to tenderize the tough fibers. However, by cooking these pieces of meat slowly, for a long period of time, you can also enjoy a tender slice of beef. To cook beef at low temperatures, set the meat on a rgck in a shallow pan and place it, uncovered, in an oven set at 225 F. For tender meat the tougher cut must always be cooked to well done. As cooking times may vary, it's best to use a meat thermometer to decide when the meat's readv to eat^ You'll know it's well done when the thermometer reaches 107 F or 77 C. As a general guide this will take two hours per pound for a 4 pound roast and 1 1/2 hours per pound for a six pound roast. Occasionally the outer surfaces of the meat may be overcooked. This can be prevented by placing a small piece of fat on top of the roast for the entire cooking time. By using this low temperature roasting method a working woman can put a six pound roast in the oven at eight in the morning and know there'll be a hot tender roast of beef waiting for her when she gets home at five. <1mn 40s>
