With today's rising food costs there's no doubt about it that we all try to save money as best we can. And perhaps some of you may be considering trying to save by buying a hind quarter of beef. You may or you may not be saving money. Here is something you might care to consider before buying. If the hind quarter weighs 147 pounds you can expect to get about 105 pounds of meat. Approximately 28% is lost in fat, bones and shrinkage. So you must consider the waste in your calculations for cost per pound. Here are the cuts you can expect to get from a hind quarter which consists of the hip and loin and the flank. From the hip section there are the rump roasts, round steaks, stewing or ground beef. From the loin section you get sirloin tip roasts, sirloin, porterhouse, T-bone and wing or club steaks as well as stewing or ground beef. From the flank there is steak and stewing beef. Be sure when you calculate out the cost that you allow for the percentage waste, to arrive at the true price per pound. <1mn 17s>
