They were used in making yeast for bread or boiled, crushed and mixed with flour for economy. During long winter evenings, slices of raw potatoes were cooked over an open fire much as we toast marshmallows today. In fact, the potato industry here in Canada dates back to the early 1600s. Today potatoes are still one of our most economical and commonly used foods. They are readily available year round in many forms - fresh, canned, frozen or dehydrated. In fact, no other vegetable is served as often or combines as well with so many other foods as do potatoes. Fresh potatoes contribute much food value to our diet when eaten often and cooked properly. Did you know that one medium boiled or baked potato without butter or gravy supplies only about 100 calories.
