William Hyman and Sons : William Hyman, by origin a Russian Jew, acquired his first fishing establishment at Grande Grave on the Forillon Peninsula, from the Guernsey merchant captain Francis Ahier in 1845. Hyman ran a general import-export company, William Hyman and Co., and was a dealer in fish, particularly cod. Hyman supplied fishermen with goods and fishing equipment from his stores at the beginning the fishing season, and bought the fish they produced, exporting it to European and Caribbean markets. Hyman owned stores and warehouses at Grande Grave and Gaspé, and facilities for unloading fish and selling merchandise at Rivière au Renard, Cap des Rosiers, Anse à la Louise, Cloridorme, and Mont Louis.

In the winter of 1855-1856, a fire destroyed the company office at Grande Grave. From 1875, Hyman began delegating the administration of his company to his eldest son Isaac Elias. William Hyman died in 1882, and the following year the company was renamed William Hyman and Sons.

In 1918, William Hyman and Sons bought the Cloridorme establishment of its competitor William Fruing and Co., a Jersey company. Isaac Elias Hyman's son Percival Gould, became managing director of William Hyman and Sons in 1919, and continued in this capacity until 1967. The company bought the Grande Grave establishment of William Fruing and Co. in 1925, and that same year changed its name to William Hyman and Sons Ltd. The company went bankrupt in 1967.
