Big or little, mild or strong, fresh or dry, name your kind and you can probably get it, for the onion family is a large one. The dry, mild, sweet onions are the Spanish, White and Bermuda types. The Spanish onion is the "giant" onion as it grows as large as 3-inches in diameter. It is familiar probably to most consumers, it's globe like and has a light yellow or tan skin. Depending on what size you choose, buy only a few because Spanish onions do not store as well as some other varieties. The Bermuda onion looks similar to the Spanish onion, but it's flatter in shape and not quite as large in diameter. The Bermuda onions are sweet, mild and juicy and good to serve raw in salads or for using in a sandwich. The White onions are also called boiling onions. These are the small globe shaped onions also called silver skins. They are usually cooked whole in stew or mixed with vegetables. They are about one inch in diameter and you get anywhere from 18 to 24 per pound. If you can find any smaller white onions they are usually tagged as pickling onions. Then there are the dry, strong flavored onions. These are the yellow onions and the Italian or red onions. Yellow onions are the ones that are probably most familiar as they are thriftly priced and available all year round. They are the old reliable for stirring into soups or stews and putting into a meatloaf or into a casserole. The red or Italian onion (actually it almost looks purple), is very pungent flavored and when cut into rings adds a special flavor and color to salads and sandwiches. <1mn 50s>
