Notice descriptive – Détails Fonds/collection :CANADA. AGRICULTURE CANADANo d'acquisition :1978-0095Support :Enregistrement sonoreDate de diffusion :1973-04 ?Compagnie de production :Information Services of Agriculture CanadaGénérique (équipe de production) :reporter, Marietta HildrethDescription :Is the refrigerator the best place to store potatoes? The answer is no. Refrigerator storage is not recommended for potatoes because at temperatures below 40 , (which is the normal refrigerator temperature) the starch in potatoes is changed to sugar. The result is a change in the flavor of the potato and if the potatoes are fried an undesirable dark color appears. Potatoes should be stored in a cool dark place to prevent greening, shrivelling and sprouting. The best storage tempera¬tures are 45 to 50 F for long term storage. Potatoes kept for short term storage are best stored at 50 to 70 . The storage atmosphere should be well ventilated as poor ventilation may result in darkening of the potatoes after cooking. If you buy potatoes weekly remember that one pound of fresh potatoes yield 3 to 4 servings. <1mn 6s>Langue :EnglishRemarques :Détails de l'inventaire : -
