Today's rutabaga is a far cry from the lowly turnip of yesterday. It is prized by dieters for its low calories (1/2 cup of diced rutabaga has only 25 calories) - great for in- between nibbles. And it's en excellent source of Vitamin C tool Gourmets delight in the rutabagas' versatility of preparation and ability to combine so tastefully with other fruits and vegetables. Food budgeters will tell you it's low in cost as well. If you've been having trouble cutting the rutabaga here's the best way to do it. With a sharp knife slice off the rutabaga top, this provides a flat surface for further cutting. With the flat surface down on the cutting board, cut several slices from the sides. Now you have two flat surfaces. Put the second flat surface down and complete the cutting of the rutabaga slices. Next you peel the waxed skin and cut it into fresh sticks, dice for cooking or shred for salads.
