Acorn, buttercup, butternut and hubbard. These are all names for different types of winter squash that you will be seeing this fall and winter. I thought I would briefly describe them so you'd be able to recognize them in the store the next time you're shopping. Acorn or pepper squash is globular in shape, smooth and dark green in color with occasional orange splashes.Buttercup squash has a globular shape with a 2 to 3 inch turban shaped cap at the blossom end. The shape is smooth and it is dark green in color with yellow dots and strips.Butternut is cylindrical in shape with the base considerably enlarged. It's smooth and creamy yellow in color. The Hubbard squash is globular with a thick tapered neck, it is very hard, ridged and warted. The color varies from a dark bronze green, blue-grey to orange-red. This later one is the largest squash of them all. These squashes may be baked, boiled, steamed and all the squashes done in the pressure cooker.
