For those of us who don't have a cold storage room it is good to know that many of our fall vegetables can be successfully frozen. Among these are turnips and cabbage. The turnips selected for freezing should be smooth, firm and heavy for their size with few scars around the stem and very few roots. Turnips can be frozen in one of two ways. They can be peeled, diced and cooked until tender and packed dry or peeled diced and blanched for two minutes. After the blanching process chill the turnips thoroughly in cold water and pack dry. Cabbages selected for freezing should have a firm head. Wash the vegetable and remove any coarse, wilted or spotted leaves and core, then cut the cabbage in wedges or shred it coarsely. Either way you must blanch. The wedges take two minutes and the shredded cabbage one minute in boiling water. Chill the vegetable thoroughly and pack dry to freeze. Both the wedges and the shredded cabbage have to be thawed before cooking. The wedges will take approximately 20 to 30 minutes to thaw and the shredded cabbage two hours.
