October is the time for Thanksgiving. We are fortunate to have good supplies of turkey on the market at reasonable prices for the many of us who are planning to have the traditional roast turkey for Thanksgiving dinner. If you have a turkey which has been in the freezer fro some time you can use it so long as it's been in storage for no longer than one year. If it has been keep any longer it may deteriorate in flavor or appearance. Keep it frozen until it's time to thaw it for cooking. If you have to refrigerate after thawing you must cook the bird within 24 hours. Another think go remember is not to stuff the bird until just before roasting. Once the bird is cooked and you've had a lovely Thanksgiving dinner remember that both fresh and frozen turkey may be refrozen after cooking but it is wise to store it only for a short time, approximately one to three months. If you don't want to freeze the leftover you can keep them stored in the refrigerator in a covered container, a plastic bag or in aluminum foil for about 3 to 4 days. Be sure in every case to remove the stuffing from the bird and to wrap it separately or put it into a container for storing.
