"A lot of us today are discovering the pleasures of making our own bread. What was a necessity in our grandmother's time has become a very special treat today. Bread making is not confined to the female sex either - there are many men taking up the art of bread making. Actually bread is very simple tomake - it consists simply of flour (which ever kind you choose), water, fat, yeast, a little sugar and salt. There are 3 types of yeast that you're likely to see on the market. There's the active dry yeast which is probably the most familiar type and this is sold in packages or tins-in most parts of Canada. It gives the best results when it's rehydrated in sweetened water, not in milk, and when the water temperature is lukewarm to the touch. Be sure to follow the package directions. This yeast may be stored at room temperature until the expiry date shown which is about two years. Then there's compressed yeast which is packaged and wrapped in one ounce or 3/4 ounce cakes or in 1 pound bricks. It's sold mainly in eastern Ontario and a small part of southern Ontario and in some parts of the Maritimes. This yeast may be rehydrated in water or in milk at lukewarm temperatures. This can be stored about two weeks in the refrigerator or about two years in the freezer at 0F if small amounts are overwrapped. And lastly thereis fast acting yeast or rapid rising yeast which is sold in packages or tins in some centers from Manitoba to British Columbia. This yeast may be added directly to the flour, just follow the package directions. Rising times are reduced when this type of yeast is used. It can be stored at room temperature until the expiry date shown. Making bread is a great way to relax. Why don't you try it? <2mn 5s>"
