Why are flours enriched? This question is frequently asked by many consumers who are concerned about getting the best nutrition possible from their foods. When white flour is milled, the germ, including the outer layers and the bran are removed. This reduces the thiamin, niacin and iron content of the original wheat kernel. However, nearly all the white flours sold on the market today have been enriched with these 3 B vitamins and iron according to government standards. The milling and processing of flour increases its shelf life by eliminating the possibility of rancidity and infestation. All enriched flours must have the word enriched on the label. For the purpose of comparisons, white enriched flour, contains approximately the same nutrients in the same quantity as whole wheat flour. Stone ground flour is another term you will probably be hearing about and you'd probably like to know what this means. Well, its wheat flour milled by the traditional slower stone method as opposed to today's steel roller process. Stone ground flour may retain some germ and bran portions of the wheat kernel giving it a cream colour. <1mn 32s>
