Bring spring indoors to your dinner tables by serving gardener's grass. No it's not a mysterious new vegetable, it's another name for asparagus which comes first from our gardens. Fresh green asparagus is at its peak season on local markets. When buying asparagus look for firm, bright green colour and tips that are tightly closed and well formed. The size of the stalk is no indication of quality but very thin, wilted or crooked stalks are likely to be tough or stringy. Asparagus is extremely perishable so it should be stored immediately after purchase in the refrigerator in a moisture-proof bag and used up in a day or two. To prepare asparagus for cooking, wash it very carefully, remove any loose scales from the asparagus with a pointed knife and break off the stalk at the end because this part is likely to be tough. This is done by holding the stalk loosely and snapping off the end instead of cutting it off. It will snap easily just where the tender part and the tough part begin. Keeping the nutritive value and appetizing flavor of asparagus is a must so don't overcook it. The best way to cook it is to tie the green stalks into a bunch and stand them on end, tips up, in about one inch of salted water. Cover and bring to a boil, allowing about 10 minutes cooking time for young tender stalks and 15 minutes for large, less tender stalks. In this way it is possible to cook the spears thoroughly without destroying the appearance of the tips. Because the asparagus season comes and goes so quickly, look for locally grown asparagus in your food store now and don't be disappointed.
