The very first fresh fruit of the new growing season in Canada is rhubarb which came to us by way of the colonists who settled our country. The big season for rhubarb is May and June. Although there are many varieties of rhubarb grown, the only important distinction in the edible type is between the hothouse variety and field rhubarb. The hothouse rhubarb usually has slender pink to light red stalks with yellow green leaves and is less acid than the field rhubarb which has deeper red stalks and greener leaves. When you're selecting rhubarb, look for firm, large, crisp, straight, stalks with a rosy colour. Because rhubarb is quite perishable, it should be stored properly and here are a few tips on how to do it. If you're going to cook the rhubarb right away, trim the leaves and wipe root ends and store the stalks in a plastic bag in the refrigerator. It will keep one or two days. If you cook the rhubarb and store it in the refrigerator or it will keep from 4 to 5 days. Rhubarb is easily prepared for freezing. Wash it, cut it in 1-inch cubes and put it in a freezer bag and it will keep up to a year.
