Now is the time to bake those beautiful sponge, angel food and chiffon cakes. All these cakes feature quantities of eggs which are now so plentiful and inexpensive. These cakes are a favourite for any time and are delicious served with canned or frozen fruits, whipped cream or ice cream. Here are a few tips that will help you in baking a good sponge cake. The volume or leavening agent in a true sponge cake is the egg white alone so it is important to treat them with care. Make sure the eggs are at room temperature before beating, that no yolk drops into the whites and that utensils are free from any fat or oil and do not use plastic bowls. The egg white clings to the side of the pan during baking, if you grease the pan the cake will not rise as the egg white will slip away from the slides. When the cake is ready for the pre-heated oven make sure the cake pan is centered in the oven, and that the oven racks are centered as well. If there is more than one pan in the oven, place them in such a way that the pans are not touching or stacked one over the other. The type of pan used will also affect the finished product. Dull or dark pans absorb more heat than bright shiny ones that reflect heat, and cakes bakes in these darker pans will bake faster and have browner crusts.
