In this film, Professor Wade Toole of the Ontario Agriculture College shows what to look for in a good beef animal. The example shown is a 1½-year-old, 1,060-pound Shorthord Hereford heifer. The footage shows: medium shot of a man holding heifer by a rope and then he is joined by Professor Wade Toole; extreme close-up of the heifer's wide head; extreme close-up of hand pointing to flat horns and short forehead; extreme close-up of the heifer's wide and placid eyes, which signal contentment and a good eater; extreme close-up of the Professor pointing out the heifer's short, broad clean-cut face, with a large muzzle and nostrils, indicating strength and good feeding capacity; medium shot of full-length view of a steer, pointing out the deep flanks where the best beef is located; extreme close-up of the dewlap, which should be well marked, but not too heavy; extreme close-up of the Professor stroking the short neck vein on the steer, indicating a good muscular development throughout the entire body; extreme close-up of the Professor touching the animal's broad, deep breast and full brisket, indicating vitality; extreme close-up of the Professor pointing out long-sprung ribs, essential to great feeding capacity and rapid gains; extreme close-up of the Professor feeling the well-covered firm-fleshed loin; extreme close-up of the Professor pointing out the deep, broad hindquarters and shoulders; extreme close-up of the same area, but shot from the rear, and of the Professor showing and lifting the tail; extreme close-up of the Professor pointing out the fine leg bones that indicate the best beef; close-up of the Professor pointing out firm, elastic, even flesh, and a full view of the steer with the Professor feeling him; and extreme close-up of the animal's loose, mellow skin, with soft, silky hair, indicating healthy and good meat.
