Canadian Institute of Food Science and Technology : During the Second World War, the National Research Council Committee on Food Preservation recommended the formation of a permanent national organization devoted to food science. Changes in food processing meant that there was an increased need for training standards in food processing and secondary handling.

Following the war, the first local food science organisations formed in Montreal (1946-1947), British Columbia (1947) and Winnipeg (1949). At a food science conference in Toronto in 1951, the Montreal, Manitoba and new Toronto branches joined to form a national association. The Canadian Institute of Food Technology (CIFT) held its first national conference in Montreal in June 1958. At this conference the CIFT's by-laws were accepted by its members, which in turn paved way for letters patent to be issued on January 20, 1959, recognising the CIFT as a national body.

The Institute began publishing a newsletter in 1960, and its popularity among members led to the creation of the CIFT Journal in 1968. The organisation adopted the name Canadian Institute of Food Science and Technology in 1971. The CIFST's purpose is advocacy and promotion of applying science and technology to ensure quality, safety and wholesomeness in the Canadian food supply, and by linking professionals from across the diverse areas that work in the food science and technology field.

Historique de la conservation :

The initial donation was made to the National Archives in 1979 from the Canadian Institute of Food Science and Technology. Subsequent accruals were received from Mr. Ian Campbell in 1983 and 1986; in 1992 from the CIFST and in 1998.
