From the interview: "Lufa is a very basic proposition. We want to grow food where people live and we want to grow it more sustainably using, obviously, no pesticides, herbicides or fungicides; catching rainwater; recirculating all the irrigation water-so having no water or nutrient loss; composting; using half the energy of heating-in Montreal and you need a lot of energy for heat-and more importantly, using no new land. About seven years ago, we started working on this new concept, and it was a very challenging project. People looked at us and said, "You're crazy. You have no background in plant science and architecture, in growing food, in distribution. Yet you want to reinvent the way we look at food, the way we grow food, the way we distribute food. When we looked at it early on, the project was a bit of a child's dream-a bit of an idealist view of how food should be. Food should be grown in the cities! Food should be grown perfectly by local people! It should be brought to me the same morning it's harvested. We went from that idea into this, through a tremendous amount of innovations and hard work and we had to just rethink the way we did our crop planning, the way we managed the farm, the way we think of distribution, and software has been at the heart of all this. Mohamed Hage, a self-described "technology geek" turned farmer extraordinaire, is reinventing food production. He's the president and founder of Lufa Farms, the world's first commercial rooftop greenhouse farm-an organic one at that-in an industrial district in the northeast of Montreal. Lufa has a second rooftop farm in the city's western suburbs and a third one is planned for Boston.
