Here is guideline to insure that you have the right proportion of ingredients in the casserole. For six people, combine 3 cups of a protein food such as canned or cooked beef, pork, fish, poultry or beans. Six eggs could also be used as the protein. You'll need 2 cups of cooked rice, macaroni, noodles or diced potatoes for a starch portion, and 2 cups of canned, frozen or cooked vegetables. Top the casserole off with 2 cups of liquid. Gravy, cream or tomato sauce, or a 10- ounce can of condensed soup with 3/4 cup of water, milk or broth, are all suitable. For seasonings use your own choice of Worcestershire sauce, soya sauce, catsup, spices, herbs or packaged seasoning mix. It is handy to have these ingredient proportions on hand in your recipe box.
