Young couples, middle aged couples whose children have grown up, or two friends sharing an apartment have a common problem. Cooking for two people is a challenge, especially when both have full-time jobs and limited time for meal preparation. By planning meals and doing some advance baking or pre portioning you can greatly reduce the preparation time. Purchase foods in quantities which provide adequate meals but no leftovers or waste. If you aren't big vegetable eaters, packages of some fresh vegetables may be too large for your needs. In this case, frozen produce helps increase the variety in meals, and elimi¬nates a leftover or waste problem. At times it's less economical to buy small quantities of food. For example during cooking a small roast dries out and shrinks more than a large roast. Therefore it's better to buy a larger roast and plan to freeze part of the cooked meat in serving-size packages. When you do make a special dish, prepare extra individual serv¬ings for the freezer. For example, individual meat loaves could be cooked in muffin cups and frozen in 2-serving packages. Bean dishes freeze very well, and most casseroles can be frozen too. Baked goods usually freeze successfully. Cut cakes and squares in serving-size pieces and freeze them in small packages. If baking time is at a premium, individual servings can always be purchased at a bakery. Buy only as much fresh fruit as you can eat before it spoils. If you get too much, most fruits can be stewed or used as the basis of a fruit crisp. Once cooked, these could be eaten immediately or cooled and frozen for later use.
