Maybe that's why French Canadians have developed a love for a hearty form of onion soup - one that's satis¬fying enough to be a meal in itself. When served in the true French style, steaming hot bowls of onion soup are topped with thick slices of toasted French bread and melted cheese. Since the slices of bread are too thick to toast in a toaster, they're usually browned under the broiler. Then each slice is generously covered with grated cheddar or Gruyere cheese and returned to the oven until the cheese is bubbly. Finally, commercially prepared or homemade onion soup is poured in soup bowls, the bread and cheese are floated on top, and the meal is served immediately. French onion soup is ideal for a meal which has to be prepared in a hurry.
