The fresh rhubarb you buy now has a more delicate flavor and color than the rhubarb you would obtain in the summer time. In addition it is more tender and less stringy. Whenever possible buy trimmed cellophane wrapped rhubarb from chilled produce counters. If leaves are left on they tend to remove moisture from the stalks and cause wilting to occur. Cellophane wrappers lock in moisture. If you purchase unwrapped, untrimmed rhubarb, cut off the leaves as soon as possible, rinse the stalks in cold water and wrap them in air¬tight plastic bags. With this bit of care, you will prevent wilting and preserve the maximum flavor.
