Anyone for summer entertaining? Perhaps you're planning a bridal shower for a special friend or maybe even a "come-for- dessert" party. In either case you'll want to serve a dessert that's special but still easy to fix. Why not try cool and easy treats made with ice cream! Here's a few ideas. Frost a 1/2 gallon brick of your favorite ice cream with sweetened whipped cream or a whipped topping. Decorate this with cut-up maraschino cherries and chopped nuts and freeze until serving time. Another cool treat is to slice ice cream into serving-size squares and coat with toasted flaked coconut, then return to the freeze When ready to serve, spoon thawed frozen orange juice concentrate over each slice. For brownie lovers stir vanilla ice cream to soften and spoon on top of a pan of brownies and freeze. When ready to serve simply cut into squares and drizzle with chocolate syrup. And don't forget ice cream for family desserts! A quick treat is to swirl crunchy peanut butter through slightly softened vanilla or chocolate ice cream. <2mn>
