Like all dairy foods, ice cream must be taken care of properly if it is to be enjoyed at its best. The most important musts in storage are to hold ice cream at 0 F or lower and keep it tightly wrapped. Also keep ice cream from ups and downs in temperature and this means to return the carton to the freezer before the ice cream melts. Partial melting and refreezing causes it to become icy or coarse. After removing part of the ice cream from its container, press a small piece of foil, wax paper or transparent wrap against the surface of what's left to keep out the air and to prevent a wax like film from forming on top of the ice cream. Then reseal the carton and return it to the freezer.
