The answer is no. Refrigerator storage is not recommended for potatoes because at temperatures below 40 , (which is the normal refrigerator temperature) the starch in potatoes is changed to sugar. The result is a change in the flavor of the potato and if the potatoes are fried an undesirable dark color appears. Potatoes should be stored in a cool dark place to prevent greening, shrivelling and sprouting. The best storage tempera¬tures are 45 to 50 F for long term storage. Potatoes kept for short term storage are best stored at 50 to 70 . The storage atmosphere should be well ventilated as poor ventilation may result in darkening of the potatoes after cooking.
