It is said that the Chinese were the first to domesticate pork around 2900 B.C. Irish farmers called the pig the gentleman that paid the rent, because pigs gave them both food and cash to pay the land rent. It is said that every part of the pig can be used except the squeal, it is makings of ham, bacon, pork roast, pork chops, spicy sausages and lard for the tenderest of pies. In addition to edible portions of the pig there are skins for bags and gloves and bristles for brushes. Gone is the fat porker of old. Today's pork is lean, juicy and tender. So what's so good about pork you might ask? Well, pork supplies high quality protein which is essential to growth and health. It's an excellent source of thiamine and niacin which are B vitamins. It's a good source of phosphorus and iron, and pork liver is an excellent source of these minerals as well as vitamin A, riboflavin and niacin. You may be happy to know as well that the lean portions of cooked pork contain about the same amount of calories as the lean of other meats. What cuts to buy and the amount, depend largely on your family and the occasion. For example shoulder chops and picnic shoulders are usually a better buy than the loin chops and roasts for family meals. When you're buying pork cuts compare prices on the base of cost per serving rather than cost per pound.
