I am thinking particularly of fruit cakes because as most of us know they take on a mellow flavor when aged or ripened. There are a few ideas that you might like to try for Christmas especially if you're giving baking for gifts. You can bake regular fruit cake batter in small paper baking cups. These small cakes can then be glazed decorated and added to an assortment of baked goodies to give away. A larger fruit cake may be wrapped first in cheese cloth and soaked in your favorite spirits such as rum, brandy, wine or cider. This gives the fruit cake a delicious flavor and also keeps it nice and moist. All fruit cakes, large or small, should be wrapped in foil or in moisture-proof film to ensure a tight seal to keep in the natural moisture and flavor.
