Since cheddar is Canada's most popular cheese you're probably more familiar with it than any other. However, there are many varieties of cheeses both domestically made and imported. In fact, most of the cheeses which may have strange sounding names are actually manufactured here in Canada although their origins could be from other parts of the world. Camembert cheese for instance comes to us by way of France. It is creamy white with a grey white mold surface. The flavor is mellow to pungent and is best served on a cheese tray or with fruit. Gruyere cheese is firm and smooth light yellow in colour with small holes. The flavor is similar to Swiss cheese but a bit sharper. Serve this cheese on a tray as a dessert or use it to make fondues. Mozzarella cheese has its origins in Italy. It is creamy white, semi-firm with a plastic unripened texture. It is very mild and is used in main dishes such as pizza or lasagna, as well as in sandwiches and for snacks. Oka and Anfrom both with rather strange sounding names are actually Canadian cheeses. They are creamy yellow with a thick russet surface and are semi-firm with a full rich flavour. They can be served on a cheese tray with crackers and with fruit. Don't limit yourself to one kind of cheese, try several of them.
