There is no doubt that summer gives us many bonuses and the one bonus which we should take advantage of is the abundance of fresh vegetables that are available during the summer months. Prices are low and quality and flavor are tops. Fresh vegetables need to be cooked and stored properly to retain their flavor, texture and food value. Vegetables should be stored in a covered container or plastic bag in the refrigerator. Most vegetables shouldn't be washed before storing. But green peppers, parley, radishes, celery and spinach may be washed and trimmed and then stored in a plastic bag with a paper towel to absorb any extra moisture. Before cooking wash vegetables thoroughly and if you have to cut the vegetable at all, try and keep the pieces a little on the large size as the smaller you cut them the more nutritional loss you will have. Next, place the vegetables in a small amount of boiling water, then bring them back to a rapid boil, turndown the heat and cook them until tender.
