Have you often gone along the rows of your supermarket looking at the lovely fresh greens and wondered exactly what they were? I know sometimes it can be very confusing, so I thought I would tell you a little about the different types of lettuce that you are likely to see this summer. Iceberg lettuce is probably the most common to us all year round in Canada. It's crisp, has a firm head with medium green outer leaves and pale inner leaves. Boston or Butter-head lettuce has a loose head with soft waxy green leaves that separate quite easily. Romaine or Cos lettuce as it's often called, has an elongated head, straight upright dark green coarse outer leaves and it usually has bleached inner leaves with thick, crisp midribs. And then there's leaf lettuce which probably a lot of you are growing in your gardens this summer. This is loose, in bunches with fan shaped curled bright green leaves. If you are in a rut using the same kind of lettuce all the time, try some of the others or combine different ones. I'm sure you'll be happy with the results. To keep lettuce at it's best quality here is a hint on how to store it. Lettuce will keep approximately one to one-half weeks in the refrigerator. You should store it covered in a container or plastic bag but don't wash it before storing but do wash it before using. <1mn 42s>
