Many consumers wonder which types of foods freeze well and which ones don't. Fruits that freeze well are berries, sour cherries and rhubarb. Peaches, apples and apricots require special treatment to prevent discoloration. Powdered or crystalline ascorbic acid (vitamin C) may be added to the fruit to prevent discoloration. Pears don't take well to freezing - they become soft and mushy. Some vegetables freeze better than others - for example asparagus, beans, peas, spinach and whole kernel corn are very good when frozen. Celery. lettuce, tomatoes, cucumbers and other vegetables usually eaten raw don't freeze well. Root vegetables such as young carrots and parsnips may be frozen but it is seldom practical to store them in valuable freezer space which could be used for other foods. Good quality beef, pork, lamb and veal may be frozen successfully. All meat should be thoroughly chilled on the carcass for at least 24 hours before freezing. Poultry may be frozen with good results. Birds should be eviscerated, washed and dried but not stuffed. Freshly killed birds should be chilled 12 hours before freezing. Eggs may be frozen quite successfully but they must be broken out of the shell before freezing. Most prepared foods such as baked goods and casseroles freeze satisfactorily. In general, family tested recipes can be used for these prepared foods.
