During the winter months you'll probably be using more canned fruits and vegetables. For ease in selection and for quality products look at the Canada grade mark on the container. The Canada Grades available in canned fruits and vegetables are Canada Fancy, Canada Choice, and Canada Standard. If you don't know the differences between the three of them it's often difficult to make a decision on which to buy. The price of the top grade which is Canada Fancy will probably be higher than the Canada Standard grade - but you'll not choose the grade on price alone but on the use of the product as well. For instance, Canada Standard products are good quality products that are used where appearance is not an important consideration. Fruit of the grade is good for puddings, gelatin desserts or frozen dishes, and vegetables are good for soups or scallop dishes. Where appearance is the most important consideration such as peaches for fancy dessert, you would probably want to buy Canada Fancy. In general, Canada Choice products have excellent flavour and tenderness but the appearance is less perfect than the top graded product. Remember as well as price consideration, choose your graded products for their intended use.
