Like all other foods, ice cream must be stored properly if it's to be enjoyed at its best. The most important points to remember are that the ice cream must be kept tightly wrapped, and that it must be stored at proper freezer temperature, which is -18 C or lower. Also, protect ice cream from fluctuating temperatures by returning it to the freezer as soon as possible. In a combination refrigerator - freezer, or in a home freezer, ice cream will keep its quality for 1 month at a freezer temperature of -18°C or lower. After this time, the texture deteriorates, as the ice cream begins to dry out and shrink from the sides of the container. Improperly packaged ice cream develops a gummy surface. To help prevent this, press a small piece of foil or transparent plastic wrap against the surface of ice cream left in an opened container. Fluctuating temperatures cause ice cream to thaw, then refreeze. This can cause coarse, grainy texture to develop. Eventually, improperly handled ice cream will lose flavor, texture and even nutritional value. So store your ice cream for 1 month only at -18°C. <1mn 19s>
