The red or pink hot house tomatoes in our stores now, are certainly more flavorful than imported tomatoes. Imports are picked when they're still completely green, and allowed to mature in transit. Hot house tomatoes are left on the vine until the red color appears, then they're picked and shipped to market. You may find them sold in cartons or by the pound. To be sure you're buying Canadian hot house tomatoes - check the grade. If it says "Canada No. 1 Product of U.S.A.", the tomatoes are imported. If the label says only "Canada No. 1", you'll know they are Canadian grown. When selecting tomatoes, look for those which are free from blemishes, cracks and irregularities. If they aren't quite ripe, hold them at room temperature away from direct sunlight until pink or red, then refrigerate. Few vegetables are as welcome in the spring as tomatoes. For a bright accent in salads, sandwiches and hot dishes, add a few tomatoes. Or how about cold stuffed tomatoes with a spring meal? To avoid wasting any pulp, cut the tomatoes in quarters, being careful to leave them attached to the base. Then spread the tomato open like a flower and add the filling. Cottage cheese, coleslaw, chicken or ham salad are a perfect choice. <1mn 18s>
