Maple syrup festivals are over for this year, and many of us are now in the process of buying our winter supply of this treat. The most important point to remember when buying maple syrup is to look for the words "Pure Maple" on the product label. Imitation maple syrup, labelled "artificially maple flavored" is often sold in bottles similar to those used for pure syrup. By looking for the words "pure maple" on the container, you can ensure you're getting the real thing, not an imitation. Grade is another guide to quality, although grading of maple syrup is not compulsory in Canada, except within Quebec. The grades you would most likely find are Canada Light and Canada Medium. These may also be labelled Grades A and B. Canada light syrup is a light amber color with a mild characteristic flavor. Canada Medium is a darker amber with a somewhat stronger flavor. Occasionally, you may also see Canada Fancy syrup - a very fine quality product. Normally 75% of the syrup produced falls within these top 3 grades. The remainder is a considerably darker syrup with a much stronger flavor and sometimes a trace of fermentation. Most of this is sold to the States for blending purposes, as consumers don't care for the strong flavor. At home, store maple syrup in a cool, dry place. Once the container has been opened, keep it in the refrigerator. After a larger container of syrup has been opened, bring the product to a boil, then bottle it in sterile sealers or other jars of a convenient size. Keep one jar handy in the refrigerator, and the rest in a cool dry place until they're needed. <1mn 43s>
