Cowboy steak, family steak, steak tails, country club roast... the list of ambiguous names goes on and on. In fact, a survey begun two years ago revealed over 300 names being used for beef cuts in retail stores. Consumers have undoubtedly wondered if there would ever be an end to this confusion. Finally a solution is in sight. A federal committee representing several government departments, industry and consumers, has developed a voluntary standard identification system for beef wholesale and retail cuts. Under this system, each package of fresh beef may be labelled with the wholesale and/or retail names of the cut. The 8 wholesale or primary cuts include the brisket, chuck, shank, plate, flank, rib, hip and loin. These are then subdivided into Secondary or Retail cuts. For example, from the Chuck comes the neck, blade, cross rib, chuck short rib and shoulder. Other descriptive terms such as top, bottom, boneless, rolled, roast and steak can also be used on the label. Most of the names selected for primary and secondary cuts indicate from which part of the animal the meat has come. Basically, uniform labelling could ensure that a "beef rib eye steak" will be called a "beef rib eye steak" in all stores throughout Canada - not a Delmonico steak in one store and a "Spencer Steak" in another. This uniformity should reduce shopper confusion at the meat counter and simplify comparison shopping. It will certainly be easier for us to keep track of the suggested 18 names for retail cuts than it was to remember 300 names. <1mn 43s>
