Miniature meat balls are a convenient, handy and inexpensive food to keep on hand in the freezer. Right now, ground beef is a very good buy. On the next shopping trip, take advantage of this low price and buy extra ground beef for the freezer. Remember that ground beef should be frozen on the day it's purchased. To make miniature meat balls, prepare the meat mixture as you normally would for hamburgers. Pat the meat out to form a large square about 1/2 inch thick, then cut the meat in 1/2 inch cubes. Each cube then can be quickly made into a ball between the palms of your hands. Meatballs may be frozen raw or cooked for up to 3 months. To cook large quantities of meatballs, use a broiler. Miniature meatballs can be added to many dishes. Vegetable or meat-based soups become a meal-in-a-dish when cooked meatballs are added. Beef up spaghetti sauce by reheating the balls just before the sauce is done. Some people enjoy meatball stew, others like meatballs in casseroles. Miniature meatballs are also nice served in a mushroom sauce, or perhaps over rice with a plum sauce. Finally, the tiny meatballs make a good appetizer. Broil the frozen uncooked meatballs then insert a toothpick in each. A cherry tomato, pickled onion, pineapple chunk or green pepper wedge on the toothpick is nice for colour. <1mn 27s>
