Consumers have been noticing the word "rutabaga" in stores on labels above the vegetable we've been accustomed to calling turnip. In Canada, we grow rutabagas and, under federal legis¬lation, the vegetable must be labelled this way in stores. It also must be labelled with the grade, Canada No. 1. This ensures you of a sound, firm, well-shaped and trimmed product. Rutabagas are yellow-fleshed and have an especially mild, sweet flavour. The name is derived from the Swedish "Rotabagge" meaning "round root". Our rutabaga is a superior variety which has been developed especially for table use. It also stores well through the winter, after being lightly coated with wax. A true turnip is grown in the United States. It has a white flesh, doesn't store well, and the flavour is entirely different from that of a rutabaga. Rutabaga can be purchased in a wide variety of sizes. This enables you to choose just the amount you need. As a guide, one pound gives about 3 servings. At home, store rutabaga in the refrigerator, vegetable crisper or a cool basement to retain the quality, flavor and nutritional value. <1mn 16s>
