Veal has traditionally been served only on an occasional basis, since it used to be one of our more expensive meats. During the first two months of this year, the number of veal calves coming to market was about 80% above levels for the same period of 1974. This trend became evident last November. With veal exports down, the increased slaughter means more reasonably priced veal for us to buy. Cuts of good quality veal will vary in appearance since the animals vary in maturity and weight. Young veal is greyish-pink more mature veal is pinkish brown. Mature meat also tends to be firmer than meat from younger animals. Veal has much less fat than other meats. In fact, some cuts completely lack fat cover. Take this into consideration when comparing the cost of veal and comparable cuts of beef or pork. Usually the veal has less waste. This lack of fat does influence the cooking method. To keep the meat juicy, lay pieces of fat, salt pork or bacon over roasts. Remove the fat for the last hour of cooking to brown the meat. Chops, steaks or cutlets to be broiled should be brushed well with fat first. Most cuts of veal are tender enough to be roasted without a cover, panfried, baked or broiled. Only cuts from the shank, breast, neck or flank require pot roasting or stewing. Veal is a delicious, mild-flavored meat. Take advantage of the good supplies now and serve it for a change in family meals. <1mn 36s>
