Large turkeys are in plentiful supply and are frequently featured as "specials" in many supermarkets. As you shop for turkeys, you may find that the price per pound varies. Grade is a major factor influencing price. Poultry grades are primarily based on appearance. Graders check the amount and distribution of meat and fat, and they look for carcass deformities, discoloration, skin tears and pinfeathers. Canada A grade is the top quality, and usually commands the highest price. Canada B grade birds may have slightly more imperfections. Canada Utility grade may have broken skin or a part such as the leg or wing missing. In all other respects, Utility birds must be at least Canada B grade. All of these birds are well fleshed and make good eating for family meals.
