Consumers needn't weep over onions this year. Storage supplies are high, and prices have fallen accordingly. Shoppers should look for firm, dry onions with paper-like shiny, crackly skins. Store the bulbs in a cool, dry place, using containers like mesh bags or shallow baskets, which have good air circulation. Also keep onions away from the potatoes. Apparently, onions absorb moisture from the potato and that speeds decay. An onion's claim to fame lies in the flavour and texture it adds to other foods. However that extra zest isn't worth crying over! When raw onions are cut, tears are caused by an oil which sprays upward as a vapor and irritates the eyes. By peeling onions under cold running water, you can reduce the effect of the vapour and have tear-free eyes. This same oil gives onions their flavour. In cooking, it blends with the fats and oils in other foods. That's why onions to be added to other dishes are often sauteed in fat for a few minutes before being combined with the rest of the ingredients. <1mn 10s>
