Ready-to-eat breakfast cereals are often thought to be made from refined grains, while the cooked cereals are from whole grain products. Yet these associations aren't always correct. Both whole grain and refined cereals can undergo processing to be made ready-to-eat and both can be sold in forms requiring cooking. Let's look at the ready-to-eat cereals. Either the whole grain or refined cereal has been processed by puffing, flaking or shredding. Kids love cereals like puffed rice or puffed wheat. In the puffing process, the entire cereal grain is dried, then forced under pressure into a chamber where, as soon as pressure is released, the cereal explodes into puffs. Flakes of cereals like bran, corn or wheat are the most common ready-to-eat form. In the flaking process, the grains are cooked, rolled and dried to make crispy, curly and sometimes blistered flakes. Finally, in shredding, thin shreds of cooked cereal grain are sliced, cut, then toasted for crispiness. Rice and wheat are the two grains which are usually shredded. Both whole grain and refined cereals can be sold in forms requiring cooking. Farina, or cream of wheat, is a refined granular cereal, while rolled oats and cracked wheat are whole grain. Most cereals requiring cooking are new processed to reduce cooking time. Quick-cooking rolled oats, for example, are rolled thinner than regular rolled oats. <1mn 34s>
