Canadians could learn a lot about meat cookery from cooks in countries like Hungary, Italy, Mexico or Latin America where meats have always been scarce. These people have been stretching meat for centuries. Mexicans and Latin Americans use dried beans to extend small quantities of meat. Meats contain protein of high quality; vegeta¬bles such as dried beans contain a lower quality of protein. How¬ever when protein from a vegetable source is combined with protein from an animal source, the quality and quantity of protein in the combination is considerably higher. For an inexpensive meal which contains high quality protein, dried beans could be combined with ground beef. Beanburgers, for example, make a hearty luncheon meal. To prepare the burgers, heat baked beans and cooked ground beef in a spicy tomato sauce and spoon this over toasted hamburger buns. Chili con carne is a spicy Spanish American dish. For a quick chili, brown minced beef and onions, then add canned kidney beans, tomato juice, chili powder and salt and pepper. Once the chili has simmered for about 20 minutes, serve it with toasted brown bread and a crisp salad. By the way, extra chili freezes well. Why not make a large batch and freeze the remainder for future meals. <1mn 27s>
