In winter, mothers who make box lunches, and husbands and child¬ren who eat them, frequently suffer from the "lunchbox blues". Even one small change in a packed lunch can relieve monotony and make an afternoon a lot brighter. It's very easy to begin varying lunches by changing the type of bread used for sandwiches. Why not buy oatmeal, cracked wheat, pump¬ernickel or fruit bread; use muffins; or experiment with kaisers, onion buns, bagels, hot cross buns, or any of the other types of rolls available. Tomatoes and cucumbers are often left out of box lunch sandwiches since they make the bread soggy. This problem can be avoid¬ed by wrapping tomato or cucumber slices separately in waxed paper. They can easily be slipped into a sandwich at noon. Occasionally make a very different lunch. A cold cooked chicken leg, roll and fresh vegetable is always enjoyed if lots of napkins are provided. If you have a thermos, send along a hot soup containing chunks of meat. This can provide a satisfying meal, especially if a roll and fruit are included. You could also pack a hearty meat salad in a plastic container. For a different dessert, make your own individual puddings or fruit cups in empty yogurt containers or baby food jars.
