Ground beef can rarely be beaten when it comes to economy or versatility. It's interesting to note the role this has played in the cooking of various countries. Hungarians for example, stuffed cabbage rolls with a ground beef mixture, the Swedes made Swedish meatballs, Mexicans added it to chili dishes and the Jewish added meatballs to soup. Then, of course, Italians used ground meat as the basis of lasagne, ravioli and other pasta dishes. Tiny individual meatballs are handy to have on hand in the freezer for emergency meals. They can be speared on toothpicks for a quick appetizer, or heated in different sauces for the main course. Some consumers avoid ground beef because of its fat content. Regulations state that this must be under 30% unless the product is labelled "lean". Lean ground beef can contain no more than 15% fat. While it's generally assumed that the terms "ground chuck" and "ground round" apply to ground beef with a lower fat content than hamburger, the fat content may vary from store to store. Proper handling of ground beef at home is important to prevent a high bacterial content. If you aren't going to use this meat within 1 or 2 days, it should be frozen. Make certain the meat is tightly enclosed in a freezer wrap to prevent freezer burn or the rapid de¬velopment of off-flavors. Use up frozen ground beef within 3 months. Thaw it in the refrigerator, and avoid leaving the meat out at room temperature. To destroy harmful bacteria which might be present, always cook ground beef to well done. <1mn 34s>
