Squash is a truly North American vegetable with a history dating back 5000 years to the early cliff dwellers. While today's squash comes in a wide range of shapes, skin colours and sizes, every variety has the characteristic golden orange flesh and nutty-sweet flavour. It's this flavour which has made squash a truly all time favourite. Winter squash has another plus factor. Since it keeps up to 4 months in a cool dry place, it's available to us throughout the fall and early winter months. Canadian growers harvest 4 main varieties of winter squash. The acorn or pepper squash is globular in shape with a dark green skin occasionally splashed with orange. Its flesh is very moist, and sometimes slightly fibrous. Buttercup squash may have an orange or dark green skin, but it's easily identified by the turban-shaped cap at the blossom end. Butternut squash, with its creamy-yellow skin and elongated pear shaped has the smoothest flesh of all the squashes. Hubbard, the immense grandaddy squash, has a hard warted surface, and is globular with a thick tapered neck. Stores will often cut this variety in chunks for sale. Squash can be baked, boiled, pressure cooked or steamed. But no matter how it is cooked, steaming hot squash mashed with lots of butter, salt and pepper is a perfect accompaniment for any type of meat. <1mn 27s>
