When did you last check canned foods on your kitchen shelf? Since these keep for relatively long periods of time, we often forget that canned foods too can spoil. Check your storage conditions for canned goods. Is the cupboard damp, or is it dry and well-ventilated? Is it warm or cool? Light or dark? A dry, well-ventilated, cool dark location is best for canned foods. In dry, well-ventilated air, cans will be less likely to rust. In a cool dark environment, spoilage organisms will be less likely to grow in the food. Now lift up each can on the shelf. Do any stick slightly? That could be a sign of leakage, either due to rusting of the can or to food spoilage. As food spoils, there may be a build-up of gases. This forces liquid out through the seams and may also cause bulging. Any of your cans which leak or bulge should be returned to the store, and the manufacturer should be notified. Under no circumstances should you eat or even taste the contents. While you're checking the canned goods, read the labels to make sure none should have been refrigerated. Just because a food is canned doesn't mean it can be stored at room temperature. For example canned hams or canned cheeses such as camembert should always be kept in the refrigerator. You'll want to know how long canned foods should be kept. Most foods,especially canned fruits and vegetables, retain their quality for at least 1 year. Since nutrient values drop slowly during storage, it isn't wise to keep them for longer periods. There are exceptions to this guideline and canned hams are an example. These should only be kept in the refrigerator for 6 months. <1mn 43s>
