By raising the pressure on food as it cooks, you can cut cooking times and help ease the pressure on a busy work schedule. In general, a pressure cooker reduces cooking times by 1/3 to 1/2. And because the cooking is done quickly* with a minimum of water, pressure-cooked foods retain their flavour and nutritional value better than conventionally prepared foods. This is particularly true for vegetables, which may lose considerable amounts of Vitamin C when cooked in boiling water. The basic principle of pressure cooking is simple. When water boils it creates steam, and when steam is held in a small chamber, the pressure rises. Normally the boiling point of water is 212 F, but under 15 pounds pressure, this is raised to 2 50 F. Therefore foods cook much more quickly. Whole carrots or a whole head of cauliflower for example, will cook in 3 minutes, potato halves will be ready in 9 minutes and chunks of hubbard squash will be tender in 5 minutes. Browned meat for stews requires only 8-10 minutes per pound when cooked under pressure, then once the pan is cooled, the vegetables can be added. They'll be ready after an additional 4 minutes. A couple of words of caution. First always follow the manufacturer's directions exactly when using a pressure cooker. Secondly, don't pressure cook foods like applesauce, cranberries, pearl barley or split peas. They foam and may clog the vent tube. When these precautions are taken, a pressure cooker can be a real boon to today's busy homemaker. <1mn 36s>
