Can you save money by buying a side or quarter of beef for the freezer? The answer to that question will vary according to the price being charged for the meat in the supermarket and by the seller of bulk beef. Before you shop for a side or quarter of beef, you should be armed with some basic knowledge. Grade is important in bulk purchases. Canada A is the top grade, and is identified by a red ribbon stamp running the length of the carcass. This is the grade which will most likely give you satisfac¬tion. Four levels of external fat covering are allowed within the Canada A grade. If you buy Canada A1 beef, there will be only a small amount of fat around the cuts, but if;you buy Canada A4 there will be a large amount of fat. Therefore there's more waste on a Canada A4 carcass. Most freezer beef sales are made on the basis of the "hanging weight" of the carcass. This is the weight before any excess fat or bone is trimmed away. Only 72.8% of a Canada A1 carcass is saleable meat. You'll have to pay for the 37.2% which is trimmed away, so take this into account when calculating the price of a bulk purchase. Something else to remember is that a steer isn't all steaks and rib roasts. If your family doesn't care for pot roasts, ground beef, braised beef or beef stew there's absolutely no point in buying either a side or hindquarter. Occasionally you can buy a roast or steak which doesn't meet up to expectations. Keep in mind that this could happen with the whole side or quarter of beef in a bulk purchase. Finally, buy beef from a reputable dealer. If you aren't sure of a dealer's reputation contact the nearest Better Business Bureau or Chamber of Commerce.
